The scale measures the amount of capsaicin, the compound that gives chili peppers their heat. The scale ranges from 0 for a bell pepper to over 2 million for the carolina reaper, which is currently the world's hottest pepper. Interestingly, the heat of a chili pepper can vary depending on a number of factors, including the variety of pepper, the climate in which it was grown, and even the time of day it was harvested!
