Olives are one of the oldest cultivated crops in the world, with evidence of their cultivation dating back more than 7,000 years. They are native to the mediterranean region but are now grown in many parts of the world, including california, australia, and south africa. While olives are primarily grown for their oil, they are also a popular food, with many different varieties and flavors. Interestingly, olives are not actually eaten fresh off the tree, as they are too bitter and contain a compound called oleuropein, which makes them unpalatable. Instead, they are cured in salt or brine to remove the bitterness and bring out their flavor.
